Fernanda’s Has One Table-- Our Family’s Dining Room Table--Where My Mother Would Cook Our Family Some of the Greatest Dishes I Have Ever Had. Our House Had All the Accouterments of A Fine Dining Restaurant, Down To the Espresso Cups With Demitasse Spoons, But Love and Care Is What Made Each Meal Special. I Have Taken Those Memories and Lessons With ME Throughout My Career in the Restaurant Business. I Was Lucky Enough To Begin My Management Career in Food and Beverage At the Cliff House in Manitou Springs, Colorado, With People That Would Fast Become My Good Friends and Mentors. When I Was A Sommelier and Supervisor At the Five Star/Five Diamond Penrose Room At the World Renowned Broadmoor Hotel, I Not Only Made Sure the Details of Service Were Carried Out, That the Wines Were Paired Well With the Dishes, But More Importantly, That People Had A Wonderful Time. At Plate World Cuisine, As the General Manager, I Focused On Creating an Elegant and Friendly Atmosphere. As the General Manager of the Great Oak, in Temecula, California I Focused On Executing A Fine Dining Service That Felt Comfortable and Not Stuffy. At Colterra Food and Wine, in Niwot, Colorado, I Helped Grow A Farm To Table Restaurant That Sourced the Finest Local Ingredients and Matched Them With Small Boutique Wines From All Over the World.
